I'm guessing Summerslam 88's Warrior win would be up there (mostly because that was the only PPV I've ever paid for), but I wanted some cool ones I could look up on YouTube.

Look up Luger and Windham beating Tully and Arn at Clash of the Champions #1, for one. Brock's return after Wrestlemania last year was huge. Steamboat beating Flair at Chitown Rumble 89. Punk beating Cena in Chicago. Jerry Lawler beating Curt Hennig for the World title in Memphis. Hulk Hogan's comeback spot in the Rock match at WM 18. That's a good start.
